Wai-Iti

A South Pacific Pale Ale brewed with Maris Otter (low colour) and fermented cold (15 degrees C) for a clean, lager-like taste.  Biscuity malt flavours were imparted (subtly) by the addition of Vienna and Caramalt. Heavily hopped with Wai-Iti hops, but backed up by a little American hop muscle to broaden the flavour profile a little.

 

35 Litre batch -23 IBU – OG:1.043

 

Grain Bill

  • Maris Otter – 6.0Kg
  • Caramalt – 150g
  • Vienna malt – 150g

 

Hop Schedule

  • Cascade – 25g – 90 min
  • Chinook – 5g – 90 min
  • Wai-Iti- 30g – 15 min
  • Wai-Iti – 20g – 30 min (flame out)
  • Cascade – 15g – 30 min (flame out)
  • Wai-Iti – 50g – dry hopped
